CHOCOLATE CHIP MUFFINS (from Taste of Home)
Makes: 12 muffins
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
3/4 cup miniature semisweet chocolate chips
Instructions:
1. In a large bowl, combine the first four ingredients. 2. In a small bowl, beat egg, milk and oil.
3. Stir into dry ingredients just until moistened.
4. Fold in chocolate chips.
5. Fill greased or paper-lined muffin cups three-fourths full. Sprinkle with sugar crystals (optional)
6. Bake at 400° for 18-20 minutes or until a toothpick comes out clean.
7. Cool for 5 minutes before removing to a wire rack.
